Martha Stewart’s Creamy Deviled Eggs

1. Boil the Eggs

Place the eggs in a large saucepan and cover them with cold water by about 1 inch.

Bring the water to a boil over medium-high heat. Once it reaches a full boil, cover the pan, remove it from the heat, and let the eggs sit for about 10–12 minutes.

2. Cool the Eggs

Drain the hot water and immediately transfer the eggs to a bowl of ice water.

Let them cool for at least 5 minutes. This stops the cooking process and makes them easier to peel.

3. Peel the Eggs

Gently tap each egg on a hard surface and peel away the shell under cool running water.

Pat the peeled eggs dry with a paper towel.

4. Cut the Eggs

Slice each egg in half lengthwise.

Carefully remove the yolks and place them in a medium bowl. Arrange the egg whites on a serving platter or baking dish.

5. Make the Creamy Filling

Mash the egg yolks thoroughly with a fork until they are fine and crumbly.

Add the mayonnaise, Dijon mustard, vinegar, salt, and black pepper.

Mix until the filling becomes smooth, creamy, and fluffy.

For an extra-smooth texture, you can press the yolk mixture through a fine-mesh sieve before mixing it with the other ingredients.

6. Fill the Egg Whites

Spoon the creamy yolk mixture into the center of each egg-white half.

For a prettier presentation, transfer the filling to a piping bag or zip-top bag, snip off one corner, and pipe the filling neatly into each egg white.

7. Add the Finishing Touch

Lightly sprinkle each deviled egg with paprika.

You can also add a little finely chopped fresh chives or parsley for extra color and flavor.

8. Chill Before Serving

Place the deviled eggs in the refrigerator for about 30 minutes before serving.

This allows the flavors to come together and makes them especially refreshing.

9. Serve

Serve these creamy deviled eggs chilled. They make a beautiful appetizer for Easter, Thanksgiving, Christmas, family parties, potlucks, and other special occasions.

Tip: For the creamiest filling, make sure the egg yolks are completely smooth before adding the mayonnaise and mustard. Freshly made deviled eggs are best served chilled and enjoyed the same day.
