Step 1: Bring the Meat to Room Temperature

Remove the prime rib from the refrigerator 2 hours before cooking. Pat it dry with paper towels.

Step 9: Make the Au Jus

Pour the pan drippings into a saucepan. Add the beef broth and Worcestershire sauce. Bring to a gentle simmer for 5–7 minutes. Stir in the butter and season with salt and pepper to taste.

Step 10: Prepare the Horseradish Sauce (Optional)

Mix the sour cream, prepared horseradish, Dijon mustard, lemon juice, salt, and pepper until smooth. Chill until ready to serve.

Step 11: Slice the Prime Rib

Using a sharp carving knife, slice the roast against the grain into thick or thin slices, depending on your preference.

Step 12: Serve

Arrange the slices on a serving platter and serve with warm au jus, horseradish sauce, mashed potatoes, roasted vegetables, Yorkshire pudding, or a fresh green salad.
