Grandma’s 3-Ingredient Corned Beef & Potato Casserole

Step 1: Prepare the Potatoes

  • Preheat your oven to 375°F (190°C).
  • Wash and thinly slice the potatoes (about ⅛-inch thick).
  • Slice the onion into thin rings.

Step 2: Assemble the Casserole

  • Lightly grease a 9×13-inch baking dish.
  • Arrange half of the potato slices on the bottom.
  • Add half of the sliced onions.
  • Spread half of the corned beef over the onions.
  • Repeat with the remaining potatoes, onions, and corned beef.

Step 3: Season

  • Brush the top with melted butter.
  • Sprinkle with garlic powder, black pepper, and paprika if using.

Step 4: Bake

  • Cover tightly with aluminum foil.
  • Bake for 45 minutes.
  • Remove the foil and continue baking for 20-30 minutes, until the potatoes are fork-tender and the top is beautifully browned.

Step 5: Serve

  • Let the casserole rest for 10 minutes before serving.
  • Enjoy with buttered bread, pickles, or a fresh green salad.
