  • by

Step 1: Prepare the Dough

  1. In a large mixing bowl, combine the flour, baking powder, sugar, and salt.
  2. Add the softened margarine and rub it into the flour until the mixture resembles coarse crumbs.
  3. Beat the eggs with the amasi.
  4. Pour the wet mixture into the dry ingredients.
  5. Mix until a soft dough forms.
  6. Knead for 8–10 minutes until smooth.

Step 2: Rest the Dough

  1. Divide the dough into 4 equal portions.
  2. Shape each into a ball.
  3. Cover with a clean towel and let rest for 20–30 minutes.

Step 3: Make the Filling

  1. Mix the softened butter, garlic, parsley, spring onions, herbs, salt, and pepper.
  2. Stir in the shredded cheese if using.

Step 4: Roll the Dough

  1. Roll one dough ball into a large rectangle about ¼ inch (6 mm) thick.
  2. Spread a generous layer of the garlic butter filling evenly over the surface.

Step 5: Shape the Rolls

  1. Roll the dough tightly into a log.
  2. Cut into 1½-inch (4 cm) slices.
  3. Arrange the rolls on a parchment-lined baking tray, leaving space between each one.

Step 6: Egg Wash

  1. Beat the remaining egg.
  2. Brush the tops of the rolls with the egg wash for a shiny golden finish.

Step 7: Bake

  1. Preheat the oven to 350°F (180°C).
  2. Bake for 20–25 minutes, or until the rolls are puffed and golden brown.

Step 8: Finish

  1. Brush the hot rolls with a little melted butter for extra softness.
  2. Let cool for 5 minutes before serving.
