Step 1: Slice the Tomatoes
Wash the green tomatoes and cut them into ½-inch thick slices.
Lay the slices on paper towels and sprinkle lightly with salt.
Let them sit for 10 minutes to remove excess moisture.
Step 2: Prepare the Coating Stations
Set up three bowls:
Bowl 1: Flour
Bowl 2: Eggs and milk whisked together
Bowl 3: Cornmeal, breadcrumbs, salt, pepper, and paprika
Step 3: Coat the Tomato Slices
Dip each tomato slice in this order:
- Flour
- Egg mixture
- Cornmeal mixture
Press gently so the coating sticks well.
Step 4: Heat the Oil
Heat about ½ inch of vegetable oil in a skillet over medium heat.
The oil should reach about 175°C (350°F).
Step 5: Fry the Tomatoes
Place the coated slices carefully into the hot oil.
Fry for 2–3 minutes per side until golden brown and crispy.
Do not overcrowd the pan.
Step 6: Drain and Serve
Remove the fried tomatoes and place them on paper towels to drain excess oil.
Serve immediately while hot.
