Crispy Zucchini Sticks

1. Prepare the zucchini

Wash the zucchini and grate them using the large holes of a box grater.

Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible. This is an important step—too much water will make the sticks difficult to crisp.

2. Make the mixture

Place the squeezed zucchini in a large bowl.

Add the eggs, flour, breadcrumbs, Parmesan, garlic, parsley, salt, pepper, paprika, and garlic powder.

Mix everything together until you have a thick, sticky mixture that holds together when pressed.

3. Shape the sticks

Take a small portion of the mixture and shape it into a thin, long stick.

Continue until all the mixture has been used.

If the mixture feels too wet, add another tablespoon or two of breadcrumbs.

4. Heat the oil

Pour enough vegetable oil into a deep skillet or saucepan to allow the sticks to fry properly.

Heat the oil over medium heat.

To test it, drop in a tiny piece of the mixture. It should immediately begin sizzling without burning.

5. Fry until golden

Carefully place several zucchini sticks into the hot oil, making sure not to overcrowd the pan.

Fry for approximately 2–3 minutes per side, turning gently, until golden brown and crispy.

6. Drain

Remove the cooked zucchini sticks with a slotted spoon or tongs.

Place them on a plate lined with paper towels to absorb excess oil.

Repeat with the remaining mixture.

7. Serve

Serve immediately while they’re hot and crispy with your favorite dipping sauce.
