Crispy Roasted Cauliflower

1. Prepare the Cauliflower

  1. Preheat the oven to 425°F (220°C).
  2. Wash and thoroughly dry the cauliflower.
  3. Cut into bite-sized florets.

2. Season

  1. In a large bowl, combine:
    • Olive oil
    • Garlic
    • Paprika
    • Italian seasoning
    • Salt
    • Pepper
  2. Add the cauliflower and toss until evenly coated.

3. Add Parmesan

  1. Sprinkle the Parmesan over the florets.
  2. Toss again to coat.

4. Roast

  1. Arrange in a single layer on a baking sheet.
  2. Roast for 25–30 minutes, turning halfway through.
  3. Cook until golden brown and crispy around the edges.

5. Finish

  1. Sprinkle with fresh parsley.
  2. Serve immediately.

Optional Garlic Yogurt Sauce

Mix:

  • ½ cup Greek yogurt
  • 1 minced garlic clove
  • 1 teaspoon lemon juice
  • Pinch of salt

Serve alongside the hot cauliflower for dipping.

Tips

  • Don’t overcrowd the pan; this helps the cauliflower crisp up.
  • For extra crunch, broil for the last 2–3 minutes.
  • Add a pinch of chili flakes for a spicy version.
