1. Mix the dry ingredients
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
2. Mix the wet ingredients
In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract.
3. Combine
Pour the wet ingredients into the dry ingredients. Stir gently until just combined.
A few small lumps are perfectly fine. Avoid overmixing, as this can make the pancakes less fluffy.
4. Heat the pan
Place a nonstick skillet or griddle over medium heat. Lightly grease it with butter.
5. Cook the pancakes
Pour about ¼ cup of batter onto the hot pan for each pancake.
Cook for about 2–3 minutes, until bubbles form on the surface and the edges begin to look set.
6. Flip
Carefully flip each pancake and cook for another 1–2 minutes, until golden brown and cooked through.
Repeat with the remaining batter, adding a little butter to the pan between batches if needed.
7. Serve
Stack the warm pancakes on a plate.
Top with a generous pat of butter and drizzle with warm maple syrup.
