1. Boil the potatoes
Fill a large pot with water and add the Cajun seasoning, salt, garlic powder, paprika, and sliced lemon.
Bring to a rolling boil.
Add the baby potatoes and cook for 12–15 minutes, or until they are beginning to become tender.
2. Add the corn and eggs
Add the corn pieces and eggs to the pot.
Continue boiling for about 8–10 minutes, until the corn is tender and the eggs are hard-boiled.
Remove the eggs, cool them under cold water, peel them, and set aside.
3. Add the sausage
Add the sliced jalapeño smoked sausage to the pot and cook for about 5 minutes so it warms through and releases some of its smoky flavor.
4. Cook the crawfish and shrimp
Add the crawfish and cook for approximately 4–5 minutes.
Add the shrimp during the final 3–4 minutes of cooking.
The shrimp are ready when they turn opaque and pink and curl into a loose “C” shape. Avoid overcooking them.
Drain everything well.
5. Make the garlic butter sauce
Melt the butter in a large saucepan over medium-low heat.
Add the minced garlic and cook for about 1–2 minutes, just until fragrant.
Stir in the Cajun seasoning, paprika, onion powder, and Old Bay.
Add hot sauce and lemon juice if desired.
Simmer gently for another 2–3 minutes, stirring frequently.
6. Toss everything together
Place the drained potatoes, corn, sausage, crawfish, shrimp, and peeled eggs into a large roasting pan, tray, or very large bowl.
Pour the garlic butter sauce generously over everything.
Gently toss until every piece is coated in the buttery seasoning.
7. Finish and serve
Sprinkle with fresh chopped parsley and add a few lemon wedges.
Serve immediately while everything is hot and coated in that delicious garlic butter sauce.
