Traditional French Onion Soup: A Comforting Classic for Dinner

Step 1: Caramelize the Onions

  • Heat the butter and olive oil in a large soup pot over medium heat.
  • Add the sliced onions and stir to coat them in the butter.
  • Cook slowly for 35–45 minutes, stirring every few minutes.
  • Once the onions soften, add the sugar if using.
  • Continue cooking until the onions are a deep golden brown and caramelized.

Tip: Don’t rush this step—the rich flavor comes from slowly caramelizing the onions.

Step 2: Add Garlic and Flour

  • Stir in the minced garlic.
  • Cook for 1 minute until fragrant.
  • Sprinkle the flour over the onions and stir continuously for another minute.

This helps give the soup a silky texture.

Step 3: Deglaze the Pot

  • Pour in the white wine.
  • Stir well, scraping up any browned bits from the bottom of the pot.
  • Let the wine simmer for about 3–4 minutes.

If you’re not using wine, simply skip this step and add a little extra broth instead.

Step 4: Simmer the Soup

  • Add the beef broth.
  • Stir in the Worcestershire sauce.
  • Add the thyme and bay leaf.
  • Bring the soup to a gentle boil.

Reduce the heat and let it simmer for 25–30 minutes.

Taste and season with salt and black pepper.

Remove the thyme sprigs and bay leaf before serving.

Step 5: Toast the Bread

  • Preheat the oven to 400°F (200°C).
  • Arrange the baguette slices on a baking sheet.
  • Toast for 5–7 minutes, turning once, until lightly crisp.

Step 6: Assemble the Soup

  • Ladle the hot soup into oven-safe bowls.
  • Place one or two toasted baguette slices on top.
  • Sprinkle generously with the grated Gruyère cheese.

Step 7: Broil

  • Place the bowls on a baking tray.
  • Broil for 2–4 minutes, or until the cheese is melted, bubbly, and lightly golden.

Watch carefully to prevent burning.

Step 8: Serve

  • Let the soup cool for 2–3 minutes.
  • Garnish with chopped parsley if desired.
  • Serve immediately while the cheese is hot and gooey.

Tips for the Best French Onion Soup

  • Yellow onions provide the best balance of sweetness and flavor.
  • Caramelize the onions slowly for the richest taste.
  • Gruyère cheese is traditional, but Swiss, Emmental, or mozzarella also work well.
  • Use a high-quality beef broth for the most flavorful soup.
  • For a vegetarian version, substitute vegetable broth for the beef broth.
