The Fluffiest & Creamiest Scrambled Eggs

Crack the eggs into a medium bowl.

Step 2: Whisk Well

Add the milk or heavy cream and a pinch of salt.

Whisk vigorously for about 1 minute until the mixture is smooth, light, and slightly frothy. This incorporates air, helping create fluffier eggs.

Step 3: Heat the Pan

Place a non-stick skillet over low heat.

Add the butter and let it melt slowly without browning.

Step 4: Add the Eggs

Pour the egg mixture into the pan.

Let it sit undisturbed for about 20–30 seconds until the edges begin to set.

Step 5: Stir Gently

Using a silicone spatula, slowly push the eggs from the edges toward the center.

Continue stirring gently, forming large, soft curds rather than breaking them into tiny pieces.

Step 6: Remove from the Heat Early

When the eggs are mostly set but still look slightly glossy, remove the pan from the heat. The residual heat will finish cooking them, keeping them soft and creamy.

Step 7: Season

Taste and add more salt if needed.

Finish with freshly ground black pepper and chopped herbs if desired.

Step 8: Serve

Pile the scrambled eggs onto warm buttered toast and serve immediately while they’re hot and creamy.
