Southern-Style Chitterlings (Chitlins) with Mac and Cheese, Collard Greens, and Cornbread

  1. Rinse the chitterlings several times under cold running water.
  2. Remove any visible fat or debris.
  3. Soak them in cold water with vinegar for 20–30 minutes.
  4. Rinse again until the water runs clear.
  5. Cut into bite-sized pieces if desired.

Food Safety: Chitterlings can carry harmful bacteria if not handled properly. Clean them thoroughly, avoid cross-contamination, and cook them completely before eating.

Step 2: Cook the Chitterlings

  1. Place the cleaned chitterlings in a large stockpot.
  2. Add onions, garlic, celery, and bell pepper.
  3. Stir in bay leaves, paprika, garlic powder, onion powder, black pepper, salt, and red pepper flakes.
  4. Add vinegar.
  5. Cover with water.
  6. Bring to a boil.
  7. Reduce to a gentle simmer.
  8. Cook for 3–4 hours, stirring occasionally.
  9. Add more water if necessary.
  10. Taste and adjust seasoning before serving.

Step 3: Make the Mac & Cheese

  1. Cook macaroni according to package directions.
  2. Drain and set aside.
  3. Melt butter in a saucepan.
  4. Whisk in flour for 1 minute.
  5. Slowly whisk in milk.
  6. Cook until slightly thickened.
  7. Stir in cheddar, Monterey Jack, and mozzarella until melted.
  8. Season with salt, pepper, and paprika.
  9. Fold in cooked macaroni.
  10. Bake at 375°F (190°C) for 20–25 minutes if you prefer a golden top.

Step 4: Cook the Collard Greens

  1. Cook bacon until lightly crisp (or use smoked turkey).
  2. Sauté onion until soft.
  3. Add garlic.
  4. Stir in collard greens.
  5. Pour in chicken broth.
  6. Season with salt, pepper, and pepper flakes.
  7. Cover and simmer for 45–60 minutes, until tender.

Step 5: Bake the Cornbread

  1. Preheat oven to 400°F (200°C).
  2. Mix cornmeal, flour, sugar, baking powder, and salt.
  3. Whisk together milk, eggs, and melted butter.
  4. Combine wet and dry ingredients.
  5. Pour into a greased baking pan or muffin tin.
  6. Bake for 18–22 minutes, until golden brown.
  7. Let cool slightly before serving.
