Step 1: Soak the Beans
If using dried beans, rinse them well and soak them in plenty of water overnight. Drain and rinse before cooking.
(Skip this step if using canned beans.)
Step 2: Brown the Sausage
Heat a large Dutch oven or heavy pot over medium-high heat.
Add the sliced andouille sausage and cook for 5–7 minutes, turning occasionally until browned.
Transfer the sausage to a plate.
Step 3: Cook the Vegetables
In the same pot, add the onion, bell pepper, and celery.
Cook for about 5 minutes, stirring occasionally until softened.
Add the minced garlic and cook for 1 minute until fragrant.
Step 4: Add the Beans and Seasonings
Stir in the soaked beans.
Pour in the chicken broth and water.
Add the bay leaves, thyme, Cajun seasoning, smoked paprika, black pepper, and a pinch of salt.
Bring the mixture to a boil.
Step 5: Simmer
Reduce the heat to low.
Cover and simmer for 1½ to 2 hours, stirring occasionally, until the beans are very tender.
If using canned beans, simmer for about 30–40 minutes instead.
Step 6: Make the Beans Creamy
Use the back of a wooden spoon to mash some of the beans against the side of the pot.
Stir well to naturally thicken the sauce while leaving plenty of whole beans for texture.
Step 7: Return the Sausage
Add the browned sausage back to the pot.
Simmer uncovered for another 15 minutes to blend the flavors.
Remove the bay leaves before serving.
Step 8: Serve
Spoon hot cooked white rice into bowls.
Ladle the red beans and sausage over the rice.
Garnish with sliced green onions, chopped parsley, and a few dashes of hot sauce if desired.
