Salted butter caramel

Step 1: Melt the Sugar

  1. Place the sugar in a medium saucepan over medium heat.
  2. Stir constantly with a wooden spoon or whisk.
  3. The sugar will form clumps and then melt into a golden amber liquid.

⚠️ Be careful not to burn the sugar.

Step 2: Add the Butter

  1. Once the sugar is fully melted, add the butter pieces.
  2. Stir quickly until the butter completely melts and combines with the caramel.

The mixture will bubble — this is normal.

Step 3: Add the Cream

  1. Slowly pour in the heavy cream while stirring constantly.
  2. The caramel will bubble strongly for a few seconds.
  3. Continue stirring until smooth.

Step 4: Add Salt and Vanilla

  1. Remove from heat.
  2. Stir in sea salt and vanilla extract.

Step 5: Cool

  1. Let the caramel cool for 10–15 minutes.
  2. It will thicken as it cools.
