Proven Health Benefits of Beets and Fermented Beets (Science Based)

Fermented beets are particularly interesting because fermentation can change the chemical composition of the vegetable.

During lactic-acid fermentation, microorganisms can transform certain plant compounds and produce organic acids and other metabolites. Laboratory research has found that fermentation of beetroot can increase or modify certain phenolic compounds and antioxidant activity.

However, this needs to be interpreted carefully: strong laboratory results do not automatically prove that fermented beets prevent disease in humans.

Human research specifically examining fermented beetroot is much more limited than research on beetroot and beetroot juice generally.

7. Fermented Beets and Gut Health

Fermented vegetables can contain beneficial microorganisms when they are properly fermented and remain unpasteurized.

Research on beetroot beverages has shown that fermentation can support the growth of lactic-acid bacteria, while a small human study found that consuming beetroot juice for two weeks was associated with changes in certain gut microbiota populations.

But fermented beetroot should not automatically be described as a proven probiotic treatment. The health effects depend on which microorganisms are present, whether they remain alive in the final food, and whether they are present in sufficient amounts.

8. Fermentation May Change Beetroot’s Antioxidant Profile

Several studies have found that fermentation can alter the levels and availability of phenolic compounds in beetroot.

For example, research on fermented beetroot juice found changes in betalains and increases in certain flavonoids, including rutin, kaempferol, and catechin, along with increased antioxidant activity in laboratory assays.

Another study found that lactic fermentation increased free phenolic content in beetroot beverages, although the effect on bioaccessibility differed depending on whether the beverage was juice or puree-based.

This suggests that fermentation is not simply a way of “adding probiotics”; it can actually transform the food’s chemical profile.

9. Beets Are Not a Miracle Cure

Despite the impressive nutritional profile of beetroot, claims that beets can cure hypertension, reverse diabetes, detoxify the liver, eliminate cancer, or replace medication are not supported by strong clinical evidence.

The strongest human evidence currently relates to beetroot nitrate and cardiovascular measurements such as blood pressure. Even there, the effects are generally modest and should be considered alongside diet, exercise, sleep, medications, and other established treatments.

10. Important Considerations

Beets are generally a nutritious food for most people, but a few points are worth remembering.

People taking blood-pressure medication should be aware that regularly consuming large amounts of nitrate-rich beetroot products could potentially contribute to lower blood pressure.

Beets can also turn urine or stool pink or reddish. This is commonly called beeturia and can be completely harmless.

Fermented beets require additional food-safety considerations. Fermentation should be performed using a reliable method with appropriate salt concentration, acidity, clean equipment, and proper storage. Fermentation does not make contaminated food safe.

The Bottom Line

Beets are a nutrient-rich vegetable with particularly interesting evidence surrounding their dietary nitrate content, blood-pressure effects, vascular function, and antioxidant compounds. Fermentation may further modify beetroot’s phenolic compounds and antioxidant properties, and properly fermented vegetables can contribute microorganisms associated with fermented foods.

The most scientifically responsible way to look at fermented beets is not as a miracle remedy, but as a potentially valuable addition to a varied, plant-rich diet. The evidence for ordinary beetroot is considerably stronger than the evidence for specific disease-preventing effects of fermented beetroot itself.
