Pistachio Lemon Glazed Loaf Cake

  • Preheat your oven to 350°F (175°C).
  • Grease a 9×5-inch loaf pan and line it with parchment paper, leaving an overhang for easy removal.

Step 2: Mix the Dry Ingredients

In a medium bowl, whisk together:

  • Flour
  • Baking powder
  • Baking soda
  • Salt

Set aside.

Step 3: Cream the Butter and Sugar

In a large mixing bowl:

  • Beat the softened butter until creamy.
  • Add the sugar and beat for 3–4 minutes until light and fluffy.

Step 4: Add the Eggs

Beat in the eggs one at a time, mixing well after each addition.

Stir in:

  • Vanilla extract
  • Almond extract (if using)
  • Lemon zest

Step 5: Add the Wet Ingredients

Mix in:

  • Sour cream
  • Milk

Stir until smooth.

Step 6: Combine Everything

Gradually add the dry ingredients to the wet mixture.

Mix just until combined.

Fold in the chopped pistachios gently. If desired, add a few drops of green food coloring for a light pistachio-green hue.

Do not overmix.

Step 7: Bake

Pour the batter into the prepared loaf pan.

Smooth the top with a spatula.

Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.

If the top begins browning too quickly, loosely cover it with aluminum foil during the final 15 minutes.

Step 8: Cool

Allow the loaf to cool in the pan for 15 minutes.

Lift it out using the parchment paper and transfer it to a wire rack to cool completely.

Step 9: Make the Lemon Glaze

In a small bowl, whisk together:

  • Powdered sugar
  • Lemon juice
  • Lemon zest

Adjust with more lemon juice for a thinner glaze or more powdered sugar for a thicker consistency.

Step 10: Decorate

Once the loaf has completely cooled:

  • Drizzle the lemon glaze generously over the top.
  • Sprinkle with chopped pistachios.
  • Garnish with extra lemon zest if desired.

Allow the glaze to set for about 15 minutes before slicing.
