Patriotic Ice Cream Sandwich Dessert

Step 1: Prepare the Berry Filling

  • In a small saucepan, combine the strawberries, blueberries, sugar, and lemon juice.
  • Cook over medium heat for 5–7 minutes, stirring occasionally.
  • If you’d like a thicker filling, stir the cornstarch with 1 tablespoon of water and add it to the berries. Cook for another 1–2 minutes until thickened.
  • Remove from the heat and let the mixture cool completely.

Step 2: Arrange the First Layer

  • Place half of the ice cream sandwiches in a single layer in the bottom of a 9×13-inch baking dish.
  • Trim a sandwich if necessary to fit the edges.

Step 3: Add the Whipped Topping

  • Spread half of the whipped topping evenly over the ice cream sandwiches.

Step 4: Add the Berry Layer

  • Spoon the cooled berry mixture evenly over the whipped topping.

Step 5: Add the Second Layer

  • Arrange the remaining ice cream sandwiches on top of the berry filling.

Step 6: Finish with Whipped Topping

  • Spread the remaining whipped topping over the top, creating an even layer.

Step 7: Decorate

  • Sprinkle with red, white, and blue sprinkles.
  • Garnish with fresh strawberries and blueberries.

Step 8: Freeze

  • Cover the dish with plastic wrap or foil.
  • Freeze for at least 4 hours, or overnight, until firm.

Step 9: Serve

  • Let the dessert sit at room temperature for 5–10 minutes before slicing.
  • Cut into squares and serve immediately.

Tips

  • Substitute raspberries or blackberries for part of the berry filling for extra flavor.
  • Drizzle white chocolate over the top before freezing for a decorative finish.
  • Store covered in the freezer for up to 2 weeks for the best texture and flavor.
