Old-Fashioned Depression-Era Pickled Vegetable Salad

1. Prepare the vegetables

Wash all the vegetables thoroughly. Shred the cabbage and slice the cucumbers, carrots, onion, and green pepper into thin pieces.

2. Make the pickling mixture

In a saucepan, combine the vinegar, water, sugar, salt, black pepper, and mustard seeds if using. Warm over medium heat, stirring until the sugar and salt dissolve.

3. Combine everything

Place the cabbage, cucumbers, carrots, onion, and pepper in a large bowl. Pour the warm vinegar mixture over the vegetables and toss well.

4. Add the oil

Drizzle in the vegetable oil and mix everything together until the vegetables are evenly coated.

5. Let it marinate

Allow the mixture to cool to room temperature. Transfer it to clean glass jars, pressing the vegetables down gently so they are covered with the dressing.

Refrigerate for at least 4 hours, preferably overnight. The flavors become even better after sitting overnight.

How to Serve

Serve this crunchy vegetable salad cold as a side dish with roasted meat, sandwiches, potatoes, or a simple family dinner. It also makes a delicious light snack straight from the refrigerator.

Tip: If you’re replacing the green bell pepper with cucumber, add the cucumbers after the hot pickling liquid has cooled slightly. This helps them stay crisp.
