Step 1: Bake the Pie Crust

Preheat the oven to 375°F (190°C).

Fit the pie crust into a 9-inch pie pan. Prick the bottom with a fork, line with parchment paper, and fill with pie weights or dried beans.

Bake for 15 minutes, remove the weights, then bake another 8–10 minutes until lightly golden.

Let cool slightly.

Step 2: Prepare the Lemon Filling

In a saucepan, whisk together the sugar, cornstarch, salt, and water.

Cook over medium heat, whisking constantly until the mixture thickens.

Lightly beat the egg yolks in a separate bowl.

Slowly whisk a small amount of the hot mixture into the yolks to temper them.

Pour the egg mixture back into the saucepan and cook for 2 more minutes, stirring constantly.

Remove from the heat.

Stir in the butter, lemon juice, lemon zest, and vanilla until smooth.

Pour the hot filling into the baked pie crust.

Step 3: Make the Meringue

Beat the egg whites and cream of tartar until soft peaks form.

Gradually add the sugar, one tablespoon at a time, beating continuously until stiff, glossy peaks develop.

Mix in the vanilla.

Step 4: Top the Pie

Spread the meringue over the warm lemon filling, making sure it touches the edges of the crust to seal it completely.

Use the back of a spoon to create decorative peaks and swirls.

Step 5: Bake

Reduce the oven temperature to 350°F (175°C).

Bake for 12–15 minutes, or until the meringue is beautifully golden brown.

Step 6: Cool

Allow the pie to cool at room temperature for about 1 hour.

Refrigerate for at least 3 hours before slicing for clean, beautiful pieces.

Tips for the Perfect Lemon Magic Pie

  • Fresh lemon juice gives the brightest flavor.
  • Room-temperature egg whites whip into a more stable meringue.
  • Spread the meringue over hot filling to help prevent shrinking.
  • Seal the meringue all the way to the crust to reduce weeping.
  • Chill thoroughly before serving for the best texture.

  • Refrigerate the pie, loosely covered, for up to 3 days.
  • Meringue is best enjoyed fresh and is not recommended for freezing.
