Whether you top them with ketchup or not, great eggs start with good technique.
Ingredients
- 4 large eggs
- 2 tablespoons milk or cream (optional)
- 1 tablespoon butter
- Salt
- Black pepper
- Ketchup (optional)
Step 1: Beat the Eggs
Whisk the eggs until the yolks and whites are fully combined. Add milk or cream if you’d like extra creaminess.
Step 2: Heat the Pan
Place a nonstick skillet over medium-low heat and melt the butter.
Step 3: Cook Gently
Pour in the eggs and stir slowly with a spatula, creating soft curds. Avoid high heat, which can make the eggs dry and rubbery.
Step 4: Remove Early
Take the eggs off the heat while they’re still slightly glossy. They’ll continue cooking from the residual heat.
Step 5: Season
Add salt and freshly ground black pepper to taste.
Step 6: Add Your Favorite Toppings
Serve the eggs with buttered toast, and if ketchup is your thing, drizzle on as much—or as little—as you like.
