Step 1: Activate the Dough
- In a large bowl, combine the warm milk, sugar, and yeast.
- Let it sit for 5–10 minutes until foamy.
Step 2: Make the Dough
- Add the eggs, vanilla, and softened butter.
- Stir well.
- Add the flour and salt.
- Mix until a soft dough forms.
Step 3: Knead
- Knead the dough for 8–10 minutes until smooth and elastic.
- If sticky, sprinkle in a little extra flour.
Step 4: First Rise
- Place the dough in a lightly greased bowl.
- Cover with a towel or plastic wrap.
- Let it rise in a warm place for 1–1½ hours, or until doubled in size.
Step 5: Shape the Doughnuts
- Punch down the dough.
- Divide into 12–15 equal pieces.
- Roll each into a ball.
- Make a hole in the center using your finger and gently stretch it into a ring, just like in the picture.
Step 6: Second Rise
- Place the shaped doughnuts on a floured tray.
- Cover lightly.
- Let rise for 30–40 minutes until puffy.
Step 7: Fry
- Heat the oil to 350°F (175°C).
- Fry 2–3 doughnuts at a time.
- Cook for 1½–2 minutes per side, turning once.
- Remove and drain on paper towels.
Step 8: Coat
- While still warm, roll each doughnut in granulated sugar or cinnamon sugar until evenly coated.
Tips for Perfect Doughnuts
- Keep the oil at 350°F (175°C) for even cooking.
- Don’t overcrowd the pot.
- Use warm—not hot—milk to avoid killing the yeast.
- Let the dough rise fully for the softest texture.
- Coat the doughnuts while they’re still warm so the sugar sticks well.
