Homemade Soft and Fluffy Doughnuts

Step 1: Activate the Dough

  1. In a large bowl, combine the warm milk, sugar, and yeast.
  2. Let it sit for 5–10 minutes until foamy.

Step 2: Make the Dough

  1. Add the eggs, vanilla, and softened butter.
  2. Stir well.
  3. Add the flour and salt.
  4. Mix until a soft dough forms.

Step 3: Knead

  1. Knead the dough for 8–10 minutes until smooth and elastic.
  2. If sticky, sprinkle in a little extra flour.

Step 4: First Rise

  1. Place the dough in a lightly greased bowl.
  2. Cover with a towel or plastic wrap.
  3. Let it rise in a warm place for 1–1½ hours, or until doubled in size.

Step 5: Shape the Doughnuts

  1. Punch down the dough.
  2. Divide into 12–15 equal pieces.
  3. Roll each into a ball.
  4. Make a hole in the center using your finger and gently stretch it into a ring, just like in the picture.

Step 6: Second Rise

  1. Place the shaped doughnuts on a floured tray.
  2. Cover lightly.
  3. Let rise for 30–40 minutes until puffy.

Step 7: Fry

  1. Heat the oil to 350°F (175°C).
  2. Fry 2–3 doughnuts at a time.
  3. Cook for 1½–2 minutes per side, turning once.
  4. Remove and drain on paper towels.

Step 8: Coat

  1. While still warm, roll each doughnut in granulated sugar or cinnamon sugar until evenly coated.

Tips for Perfect Doughnuts

  • Keep the oil at 350°F (175°C) for even cooking.
  • Don’t overcrowd the pot.
  • Use warm—not hot—milk to avoid killing the yeast.
  • Let the dough rise fully for the softest texture.
  • Coat the doughnuts while they’re still warm so the sugar sticks well.
