Homemade Salsa Verde

Step 1: Prepare the Vegetables

  • Remove the husks from the tomatillos and rinse them well to remove their sticky coating.
  • Cut the onion into quarters.
  • Leave the garlic cloves in their skins.

Step 2: Roast the Vegetables

  • Preheat your oven to 425°F (220°C).
  • Place the tomatillos, jalapeños, onion, and garlic on a baking sheet.
  • Roast for 15–20 minutes, turning once halfway through, until the tomatillos are softened and lightly charred.

Alternatively, you can roast everything on a grill or under the broiler.

Step 3: Peel the Garlic

  • Remove the vegetables from the oven.
  • Let them cool slightly.
  • Squeeze the roasted garlic cloves out of their skins.

Step 4: Blend the Salsa

Add to a blender or food processor:

  • Roasted tomatillos
  • Jalapeños
  • Roasted onion
  • Roasted garlic
  • Fresh cilantro
  • Lime juice
  • Olive oil (if using)
  • Ground cumin
  • Salt
  • Black pepper

Blend until smooth or leave slightly chunky, depending on your preference.

If the salsa is too thick, add a little water until you reach your desired consistency.

Step 5: Taste and Adjust

Taste the salsa and adjust as needed:

  • Add more lime juice for extra brightness.
  • Add more salt to enhance the flavors.
  • Blend in another jalapeño if you prefer a spicier salsa.

Step 6: Chill

Transfer the salsa to a bowl or jar.

Refrigerate for 30 minutes before serving to allow the flavors to meld together.
