- 1 tablespoon cumin seeds
- 1 tablespoon whole black peppercorns
- 1 tablespoon fennel seeds
- 1 tablespoon green cardamom pods
- 1 cinnamon stick (about 1 inch)
- 5–7 whole cloves
- 3–4 black cardamom pods
- 2–3 bay leaves
- 1 whole nutmeg
- 2–3 pieces mace (optional but recommended)
