Homemade Fresh Cheese from Milk

Pour the milk into a large pot and place it over medium heat.

Slowly heat until it reaches 185°F (85°C), or until it begins to steam and tiny bubbles appear around the edges. Do not let it boil.

Stir occasionally to prevent the milk from scorching.

Step 2: Add the Acid

Remove the pot from the heat.

Slowly stir in the lemon juice or vinegar while gently mixing.

Within a minute or two, the milk should separate into white curds and pale yellow whey.

If the milk hasn’t fully separated, add another tablespoon of lemon juice or vinegar and let it sit for 5 minutes.

Step 3: Let the Curds Rest

Allow the curds to sit undisturbed for 10–15 minutes.

This gives them time to firm up and makes straining easier.

Step 4: Strain the Cheese

Line a colander with cheesecloth or a clean kitchen towel.

Pour the curds and whey into the lined colander.

Let the whey drain away completely.

You can save the whey for baking, soups, smoothies, or bread recipes.

Step 5: Season

Sprinkle the curds with salt.

If desired, mix in:

  • Chopped chives
  • Dill
  • Parsley
  • Garlic powder
  • Black pepper
  • Italian herbs
  • Crushed red pepper flakes

Mix gently until evenly combined.

Step 6: Shape the Cheese

Gather the cheesecloth and gently squeeze out excess moisture.

Form the cheese into a round or rectangular block.

For a firmer cheese, place a small plate or weight on top and refrigerate for 30–60 minutes.

Step 7: Chill

Transfer the cheese to the refrigerator until fully chilled.

The texture will become firmer while remaining creamy inside.

Step 8: Serve

Slice or crumble the cheese and enjoy it with:

  • Toast or crusty bread
  • Crackers
  • Fresh tomatoes
  • Salads
  • Roasted vegetables
  • Pasta dishes
  • Sandwiches
  • Fruit and honey
  • Olive oil and herbs

Tips for Success

  • Whole milk produces the creamiest cheese.
  • Avoid ultra-pasteurized milk if possible, as it may not separate as well.
  • Don’t boil the milk, as this can affect the texture.
  • Press longer if you prefer a firmer cheese.
  • Add herbs, roasted garlic, or spices for different flavor variations.

  • Refrigerator: Store in an airtight container for up to 5 days.
  • Keep the cheese covered to prevent it from drying out.
  • This cheese is best enjoyed fresh and is not recommended for freezing, as freezing can make it crumbly.
