Frost-Bite Protein Ice Fluff (Zero-Carb Vanilla)

Place the following into a high-powered blender or food processor:

  • Ice cubes
  • Cold water
  • Vanilla protein powder
  • Xanthan gum
  • Sweetener (if using)
  • Vanilla extract (if using)

Step 2: Blend Until Smooth

Blend on high speed for 30–60 seconds, stopping to scrape down the sides if needed.

Step 3: Whip for Maximum Volume

Continue blending for 2–4 minutes until the mixture expands, becoming thick, fluffy, and similar to soft-serve ice cream.

If the mixture is too thick, add a tablespoon of cold water. If it’s too thin, add a few more ice cubes and blend again.

Step 4: Serve Immediately

Spoon the fluffy mixture into a chilled glass or bowl.

Step 5: Add Toppings (Optional)

Finish with:

  • Sugar-free whipped cream
  • A sprinkle of cinnamon
  • Sugar-free chocolate shavings
  • Crushed freeze-dried berries
  • A few drops of caramel or vanilla sugar-free syrup

Storage

This dessert is best enjoyed immediately after blending. If frozen, it will become firm, so let it sit at room temperature for 5–10 minutes before eating.

Tips

  • Use a high-quality whey isolate for the fluffiest texture.
  • Xanthan gum is the key ingredient that creates the thick, airy consistency.
  • Experiment with different protein powder flavors like chocolate, cookies & cream, or strawberry.
  • For a creamier version, replace part of the water with unsweetened almond milk.

Note: Despite being labeled “zero-carb,” the exact carbohydrate content depends on the protein powder and other ingredients you use. Check the nutrition labels if you’re following a strict low-carb or ketogenic diet.
