Fried Green Tomatoes

Step 1: Slice the Tomatoes

  1. Wash and dry the green tomatoes.
  2. Slice them into rounds about ¼ inch (6 mm) thick.
  3. Lay the slices on a paper towel and sprinkle lightly with salt.
  4. Let them sit for 10 minutes to draw out excess moisture.

Step 2: Prepare the Breading Stations

  1. Place the flour in a shallow bowl.
  2. In a second bowl, whisk together the eggs and milk.
  3. In a third bowl, combine the cornmeal, breadcrumbs, garlic powder, paprika, black pepper, and a pinch of salt.

Step 3: Bread the Tomatoes

  1. Pat the tomato slices dry with paper towels.
  2. Dredge each slice in flour, coating both sides.
  3. Dip into the egg mixture.
  4. Press into the cornmeal mixture until completely coated.

Step 4: Fry the Tomatoes

  1. Heat about ½ inch of vegetable oil in a large skillet over medium heat.
  2. When the oil reaches approximately 350°F (175°C), carefully add the tomato slices.
  3. Fry for 2–3 minutes per side, or until golden brown and crispy.
  4. Transfer to a paper towel-lined plate to drain excess oil.

Step 5: Serve

Serve immediately while hot and crispy.
