Eggplant Pizzas

1. Prepare the eggplant
Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.

Wash the eggplants and cut them into rounds about ½-inch thick. Arrange the slices in a single layer on the baking sheet.

2. Season the eggplant
Brush both sides lightly with olive oil. Sprinkle with salt, black pepper, garlic powder, Italian seasoning, and oregano.

3. Roast the eggplant
Bake for about 15 minutes, then carefully flip the slices. Continue baking for another 5–7 minutes, until the eggplant begins to soften and lightly brown.

4. Prepare the toppings
While the eggplant is roasting, slice the tomatoes into rounds. If using Italian sausage, cook it in a skillet over medium heat until completely browned and cooked through. Drain any excess grease.

5. Build the mini pizzas
Remove the eggplant from the oven. Place a tomato slice on top of each eggplant round.

Sprinkle each one with mozzarella and Parmesan cheese. Add the cooked sausage, if using. Finish with a little Italian seasoning and red pepper flakes if desired.

6. Bake again
Return the tray to the oven and bake for 8–10 minutes, or until the cheese is completely melted, bubbly, and lightly golden.

7. Garnish and serve
Let the eggplant pizzas cool for a couple of minutes. Garnish with fresh parsley or basil and serve warm.
