Step 1: Prepare the Crust
- Preheat your oven to 325°F (160°C).
- Grease a 9-inch (23 cm) springform pan and line the bottom with parchment paper.
- Mix the chocolate cookie crumbs, melted butter, and sugar until evenly combined.
- Press the mixture firmly into the bottom and about 1 inch up the sides of the pan.
- Bake for 10 minutes, then remove and let cool.
Step 2: Make the Filling
- In a large bowl, beat the softened cream cheese until smooth and creamy.
- Gradually add the sugar and mix until well combined.
- Beat in the eggs, one at a time, mixing just until incorporated after each addition.
- Add the vanilla extract, sour cream, cocoa powder, flour, and salt.
- Fold in the melted chocolate until the batter is smooth and uniform.
Step 3: Fill the Pan
- Pour the cheesecake batter over the cooled crust.
- Smooth the top with a spatula.
Step 4: Bake
- Place the springform pan inside a larger roasting pan.
- Carefully pour hot water into the roasting pan until it reaches halfway up the sides of the cheesecake pan (water bath).
- Bake for 55–65 minutes, or until the edges are set and the center still has a slight wobble.
Step 5: Cool Slowly
- Turn off the oven and crack the oven door open.
- Let the cheesecake cool in the oven for 1 hour.
- Remove from the oven and cool completely at room temperature.
Step 6: Chill
- Refrigerate for at least 6 hours, preferably overnight, for the best texture and flavor.
Step 7: Decorate and Serve
- Remove the cheesecake from the springform pan.
- Top with whipped cream and chocolate curls or shavings.
- Slice with a sharp knife dipped in hot water, wiping the blade clean between cuts.
