Crispy Spiced Fried Chicken Drumsticks Recipe

Step 1: Marinate the Chicken

Place the drumsticks in a bowl.

Pour the buttermilk over the chicken and add salt and black pepper.

Mix well so the chicken is fully coated.
Cover and refrigerate for at least 1 hour (overnight is even better).

Step 2: Prepare the Seasoned Flour

In a large bowl combine:

  • flour
  • paprika
  • garlic powder
  • onion powder
  • cayenne pepper
  • salt
  • black pepper

Mix well so the spices are evenly distributed.

Step 3: Coat the Chicken

Remove the drumsticks from the marinade.

Roll each drumstick in the seasoned flour, pressing gently so the coating sticks well.

For extra crispiness, dip the chicken back into the buttermilk and coat again with flour.

Step 4: Heat the Oil

Pour oil into a deep skillet or fryer and heat to 350°F (175°C).

The oil should be hot but not smoking.

Step 5: Fry the Chicken

Carefully place the drumsticks into the hot oil.

Fry for 12–15 minutes, turning occasionally, until the chicken becomes deep golden brown and cooked through.

Step 6: Drain the Chicken

Remove the drumsticks and place them on a plate lined with paper towels to remove excess oil.
