Crispy Southern Fried Catfish

Step 1: Marinate the Fish

Pat the catfish fillets dry with paper towels.

In a shallow bowl, combine the buttermilk and hot sauce. Add the fillets and let them soak for 20–30 minutes. This helps tenderize the fish and keeps the coating in place.

Step 2: Prepare the Coating

In another shallow dish, whisk together:

  • Cornmeal
  • Flour
  • Paprika
  • Garlic powder
  • Onion powder
  • Cayenne pepper
  • Salt
  • Black pepper

Mix until evenly combined.

Step 3: Heat the Oil

Pour about 2 inches of oil into a deep skillet or Dutch oven.

Heat to 350°F (175°C).

Step 4: Coat the Fish

Remove each fillet from the buttermilk, allowing any excess to drip off.

Press both sides firmly into the cornmeal mixture until well coated.

Step 5: Fry

Carefully place the fillets into the hot oil.

Fry 3–5 minutes per side, depending on thickness, until the coating is deep golden brown and the fish flakes easily with a fork.

Avoid overcrowding the pan—cook in batches if necessary.

Step 6: Drain

Transfer the cooked fish to a wire rack or a paper towel-lined plate.

Sprinkle lightly with a pinch of salt while still hot.

Step 7: Serve

Serve immediately with lemon wedges, tartar sauce, and your favorite Southern sides.
