Crispy Fried Alligator Bites

If you’ve never tried alligator, fried alligator bites are a delicious way to start. The meat is marinated in tangy buttermilk and hot sauce, coated in a seasoned flour-and-cornmeal mixture, and fried until golden brown and crunchy. Serve them with a creamy dipping sauce and fresh lemon wedges.

Ingredients

For the alligator

  • 1 lb (450 g) alligator meat, cut into bite-size pieces
  • 1 cup buttermilk
  • 1–2 tbsp hot sauce
  • 1 tsp salt
  • ½ tsp black pepper

For the coating

  • 1 cup all-purpose flour
  • ½ cup cornmeal
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper, optional

For frying

  • Vegetable or peanut oil, for deep frying

For serving

  • Lemon wedges
  • Chopped fresh parsley
  • Ranch, remoulade, or spicy dipping sauce
