Crispy Cabbage Fritters with Creamy Yogurt Dip

1. Prepare the cabbage
Finely shred the cabbage and place it in a large bowl. Sprinkle with a little salt and massage it gently with your hands for 1–2 minutes to soften it.

2. Remove excess moisture
Let the cabbage sit for about 10 minutes, then squeeze it firmly to remove as much water as possible. This is important for crispy fritters.

3. Make the mixture
Add the eggs, flour, shredded cheese, garlic, paprika, oregano, parsley or dill, black pepper, and a little salt. Mix everything until well combined.

4. Heat the pan
Heat the oil in a large non-stick skillet over medium heat.

5. Form the fritters
Scoop a few tablespoons of the cabbage mixture into the hot pan. Flatten each portion gently with the back of a spoon to form small patties.

6. Fry until golden
Cook for about 3–4 minutes per side, or until the fritters are golden brown and crispy on the outside.

Work in batches so you don’t overcrowd the pan.

7. Drain
Transfer the cooked fritters to a plate lined with paper towels to absorb excess oil.

🥣 Make the Creamy Yogurt Dip

Mix the Greek yogurt, garlic, lemon juice, herbs, salt, pepper, and optional red pepper flakes in a small bowl. Stir until smooth and creamy.

Serve

Arrange the crispy cabbage fritters on a serving plate and place the yogurt dip in the center. Sprinkle with a little fresh parsley or red pepper flakes and serve warm.
