1️⃣ Cook the Pasta
Bring a large pot of salted water to a boil.
Add the spaghetti or linguine and cook according to package instructions until al dente.
Drain the pasta but reserve about ½ cup of pasta water to help adjust the sauce later.
2️⃣ Cook the Shrimp
Heat olive oil and 1 tablespoon butter in a large skillet over medium heat.
Add the shrimp, season with salt, pepper, and paprika, and cook for 2–3 minutes per side until pink and opaque.
Remove the shrimp from the pan and set aside.
3️⃣ Make the Cream Sauce
In the same skillet, melt the remaining 1 tablespoon butter.
Add the minced garlic and sauté for about 30 seconds until fragrant.
Pour in the heavy cream and milk, stirring well.
Let the sauce simmer gently for 3–4 minutes until it begins to thicken.
4️⃣ Add the Cheese
Stir in the grated Parmesan cheese slowly.
Keep stirring until the cheese melts and the sauce becomes smooth and creamy.
If the sauce becomes too thick, add a little reserved pasta water.
5️⃣ Combine Everything
Add the cooked pasta to the skillet and toss to coat it evenly in the creamy sauce.
Return the shrimp to the pan and mix gently.
Let everything cook together for 2 minutes so the flavors combine.
6️⃣ Final Touch
Sprinkle parsley over the pasta and add a squeeze of fresh lemon juice if desired.
Serve hot with extra Parmesan cheese on top.
