Step 1: Prepare the chicken
Pat the chicken breasts dry with paper towels. If they are very thick, gently pound them to an even thickness so they cook more evenly. Season both sides with salt and black pepper.
Step 2: Brown the chicken
Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 4–5 minutes per side, or until nicely golden on the outside. Transfer the chicken to a plate.
Step 3: Cook the mushrooms
Add the sliced mushrooms to the same skillet. Cook for approximately 4–6 minutes, stirring occasionally, until they soften and develop a beautiful golden color.
Step 4: Add the creamy sauce
Reduce the heat to medium-low. Add the cream of mushroom soup to the skillet and stir it together with the mushrooms. If the sauce seems too thick, add a few tablespoons of water or chicken broth to reach your preferred consistency.
Step 5: Return the chicken
Place the browned chicken breasts back into the skillet, spooning the creamy mushroom sauce over the top.
Step 6: Simmer until cooked through
Cover the skillet and let everything simmer gently for about 10–15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the sauce is hot and creamy.
Step 7: Garnish and serve
Sprinkle with freshly chopped parsley if desired. Serve the chicken hot with mashed potatoes, rice, pasta, or warm crusty bread so you can soak up every bit of that creamy mushroom sauce.
