Chocolate-Caramel Crunch Bites

Preheat your oven to 350°F (175°C).

Line a baking sheet with parchment paper.

In a saucepan over medium heat, melt the butter. Add the brown sugar and stir continuously until the mixture is smooth and bubbling gently.

Allow it to simmer for about 2–3 minutes, stirring frequently.

Remove from the heat and stir in the vanilla.

Step 2: Add the Crunch

Place the crushed cornflakes and chopped nuts in a large bowl.

Pour the warm butter and brown sugar mixture over them and gently stir until everything is evenly coated.

The mixture should be sticky and golden, with plenty of crunchy pieces throughout.

Step 3: Form the Bites

Drop small spoonfuls of the mixture onto the prepared baking sheet.

Gently press each mound together with the back of a spoon so the pieces hold their shape.

Keep them fairly small—these are meant to be little bite-sized treats.

Step 4: Bake

Bake for approximately 8–10 minutes, just until the edges become golden and caramelized.

Don’t overbake them, as the caramel can become too hard.

Remove from the oven and allow them to cool completely on the baking sheet.

Step 5: Add the Chocolate

Melt the chocolate chips in the microwave in 20–30 second intervals, stirring between each interval until completely smooth.

If desired, stir in a tablespoon of shortening or coconut oil to make the chocolate smoother and easier to spread.

Spoon or drizzle melted chocolate over the cooled crunch bites.

Step 6: Let Them Set

Allow the chocolate to cool and firm up at room temperature, or place the tray in the refrigerator for about 15–20 minutes.

Once the chocolate has set, transfer the bites to a serving plate or airtight container.

The Best Part

Every bite has that irresistible combination of crunchy caramelized pieces, buttery richness, toasted nuts, and smooth chocolate.

They’re small enough to grab in one bite—which is probably why they disappear so quickly!

Make a double batch if you’re taking them to a gathering. Otherwise, you may turn around and discover the plate is empty before you even get one for yourself.
