Cheesy Roasted Cabbage Steaks

Preheat your oven to 400°F (200°C).

Line a baking sheet with parchment paper or lightly grease it with cooking spray.

Step 2: Slice the Cabbage

Remove any damaged outer leaves.

Cut the cabbage into ¾-inch to 1-inch thick rounds, keeping the core intact so the slices stay together.

Step 3: Make the Seasoning Mixture

In a small bowl, combine:

  • Olive oil
  • Melted butter
  • Garlic powder
  • Onion powder
  • Smoked paprika
  • Italian seasoning
  • Salt
  • Black pepper

Mix until well blended.

Step 4: Season the Cabbage

Arrange the cabbage steaks in a single layer on the prepared baking sheet.

Brush both sides generously with the seasoned butter mixture.

Step 5: Roast

Bake for 20 minutes.

Carefully flip each cabbage steak, then roast for another 10–15 minutes, or until the edges begin to brown and the cabbage is tender.

Step 6: Add the Cheese

Remove the baking sheet from the oven.

Top each cabbage steak with:

  • Shredded mozzarella
  • Parmesan cheese
  • Chopped red bell pepper (optional)

Step 7: Melt the Cheese

Return the cabbage steaks to the oven for 5–7 minutes, or until the cheese is melted, bubbly, and lightly golden.

For extra browning, broil for 1–2 minutes, watching carefully to prevent burning.

Step 8: Garnish and Serve

Sprinkle with fresh chopped parsley and serve immediately.

These cabbage steaks pair wonderfully with grilled chicken, steak, roasted fish, or can be enjoyed on their own as a satisfying vegetarian meal.

Tips

  • Use a large, firm cabbage for slices that hold together well.
  • Add crushed red pepper flakes for a spicy kick.
  • Try cheddar, Gruyère, Monterey Jack, or a blend of cheeses for different flavors.
  • Leftovers can be refrigerated in an airtight container for up to 3 days and reheated in the oven or air fryer for the best texture.
