Cheesy Beef Breakfast Rolls (Sugar-Free)

Step 1: Season the Beef

In a bowl, combine the ground beef with garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix until evenly seasoned.

Step 2: Cook the Beef

Heat olive oil in a large skillet over medium-high heat. Add the beef and cook for 6–8 minutes, breaking it into small crumbles until browned. Drain any excess fat if needed.

Step 3: Prepare the Eggs

Whisk the eggs with a pinch of salt and pepper until smooth.

Step 4: Make Thin Egg Sheets

Lightly grease a non-stick pan over medium-low heat. Pour in a thin layer of beaten egg, swirling to coat the pan evenly. Cook for about 1–2 minutes until just set. Carefully remove and repeat with the remaining eggs.

Step 5: Add the Filling

Spread a little cream cheese (if using) over each egg sheet. Sprinkle with cheddar and mozzarella, then add a layer of the cooked beef and a few chopped green onions.

Step 6: Roll Them Up

Starting from one edge, tightly roll each egg sheet into a log. Place the rolls seam-side down.

Step 7: Brown the Rolls

Return the rolls to the skillet over medium heat. Cook for 2–3 minutes per side until the cheese melts and the outside turns golden brown.

Step 8: Garnish and Serve

Slice each roll into bite-sized pieces if desired. Sprinkle with fresh parsley or chives and serve immediately.

Tips

  • Use lean ground turkey or chicken instead of beef for a lighter version.
  • Add sautéed spinach, mushrooms, or diced bell peppers for extra vegetables.
  • Serve with sliced avocado or a fresh tomato salad for a balanced breakfast.
  • Store leftovers in the refrigerator for up to 3 days and reheat in a skillet or microwave.
