1. Prepare the Bananas
Peel the bananas and slice them into thin round pieces (about 0.5 cm thick). Set them aside.
2. Make the Batter
In a medium bowl:
- Crack the eggs and whisk them well.
- Add milk and vanilla extract and mix.
- Add flour, baking powder, sugar, and salt.
- Whisk until the batter becomes smooth and slightly thick.
3. Heat the Pan
Place a non-stick frying pan on medium heat and add a small amount of butter or oil.
4. Cook the Pancakes
- Pour a small spoon of batter into the pan to form a small pancake.
- Immediately place banana slices on top of the batter.
- Let it cook for about 1–2 minutes until the bottom becomes golden.
5. Flip the Pancakes
Carefully flip the pancake so the banana side cooks.
Cook another 1–2 minutes until the bananas caramelize slightly and the pancake is fully cooked.
6. Serve
Place the pancakes on a plate and serve warm.
