Southern-Style Chitterlings (Chitlins) with Mac and Cheese, Collard Greens, and Cornbread

Ingredients

For the Chitterlings

  • 5 lbs fresh or pre-cleaned chitterlings
  • 2 onions, sliced
  • 4 cloves garlic, minced
  • 2 celery stalks, chopped
  • 1 green bell pepper, chopped
  • 2 bay leaves
  • 1 tsp crushed red pepper flakes (optional)
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt (or to taste)
  • 1 tbsp apple cider vinegar
  • Water to cover

For the Mac & Cheese

  • 16 oz elbow macaroni
  • 4 tbsp butter
  • 3 tbsp all-purpose flour
  • 3 cups milk
  • 2 cups shredded sharp cheddar
  • 1 cup Monterey Jack cheese
  • ½ cup mozzarella
  • Salt and pepper to taste
  • ½ tsp paprika

For the Collard Greens

  • 2 bunches collard greens, washed and chopped
  • 4 slices bacon or smoked turkey
  • 1 onion, chopped
  • 2 cloves garlic
  • 4 cups chicken broth
  • Salt and pepper
  • 1 tsp red pepper flakes (optional)

For the Cornbread

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • ¼ cup sugar (optional)
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 cup milk
  • 2 eggs
  • ¼ cup melted butter
