3-Ingredient Quick Puff Pastry

Step 1: Prepare the Butter

Cut the cold butter into small cubes and keep it refrigerated until ready to use. Cold butter is essential for creating flaky layers.

Step 2: Mix the Dough

Place the flour in a large mixing bowl.

Add the cold butter cubes and gently toss them in the flour.

Using a pastry cutter or your fingertips, lightly press the butter into the flour. Leave plenty of pea-sized butter pieces—don’t fully blend them.

Step 3: Add the Water

Gradually pour in the ice-cold water while stirring with a fork.

Mix just until the dough begins to come together.

Step 4: Form the Dough

Turn the mixture onto a lightly floured surface.

Gently press it into a rough rectangle without overworking the dough.

Step 5: First Fold

Roll the dough into a rectangle about 8 × 12 inches.

Fold the top third toward the center, then fold the bottom third over it like a letter.

Rotate the dough 90 degrees.

Step 6: Repeat the Folding

Roll the dough into a rectangle again and repeat the folding process.

Perform 4–6 folds in total to build flaky layers.

If the butter starts to soften, refrigerate the dough for 15–20 minutes before continuing.

Step 7: Chill

Wrap the finished dough tightly in plastic wrap.

Refrigerate for at least 1 hour before using.

Step 8: Roll and Bake

Roll the chilled dough to about ⅛ inch (3 mm) thick.

Use it for pies, turnovers, Danish pastries, sausage rolls, cheese twists, or fruit-filled pastries.

Bake according to your recipe, typically at 400°F (200°C) until puffed and golden brown.

Tips for Perfect Puff Pastry

  • Keep all ingredients as cold as possible.
  • Avoid overmixing the dough.
  • Visible butter pieces create the flaky layers.
  • Chill the dough whenever it becomes soft or sticky.
  • For a shiny golden finish, brush with a beaten egg before baking.

Storage

  • Refrigerator: Wrap tightly and store for up to 3 days.
  • Freezer: Freeze for up to 3 months. Thaw overnight in the refrigerator before using.
