3-Ingredient Fruit and Oat Breakfast Cake

This simple baked breakfast is naturally sweet, filling, and packed with fruit. It’s perfect for making ahead and enjoying with your morning coffee or tea.

Ingredients

  • 3 ripe bananas
  • 2 cups rolled oats
  • 1 cup mixed dried fruit, such as raisins, cranberries, or chopped dates

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8-inch round baking pan or line it with parchment paper.
  2. Mash the bananas in a large bowl until mostly smooth.
  3. Add the oats and mix thoroughly with the mashed bananas.
  4. Fold in the dried fruit, making sure it is evenly distributed throughout the mixture.
  5. Transfer the mixture to the prepared pan and press it down firmly with the back of a spoon or spatula.
  6. Smooth the top and add a few extra pieces of dried fruit if desired.
  7. Bake for 30–40 minutes, or until the top is golden brown and the center feels firm.
  8. Cool for 10–15 minutes before slicing.
  9. Cut into wedges or squares and serve warm.
