Italian Apple Cake

Ingredients

• 3–4 medium apples (Honeycrisp, Gala, or Granny Smith), peeled, cored, and thinly sliced

• 2 large eggs, room temperature

• ¾ cup (150 g) granulated sugar

• ½ cup (115 g) unsalted butter, melted and cooled

• ½ cup (120 ml) whole milk

• 1½ cups (190 g) all-purpose flour

• 2 tsp baking powder

• 1 tsp vanilla extract

• ½ tsp ground cinnamon

• Zest of 1 lemon

• Pinch of salt

• 1 tbsp granulated sugar, for topping

Instructions

1. Preheat the oven to 175°C (350°F). Line an 8 × 8-inch baking pan with parchment paper.

2. In a large bowl, whisk the eggs and sugar until light, pale, and fluffy.

3. Whisk in the melted butter, milk, lemon zest, and vanilla extract.

4. Sift in the flour, baking powder, and cinnamon. Add a pinch of salt and gently mix until a smooth batter forms.

5. Fold about two-thirds of the sliced apples into the batter.

6. Pour the batter into the prepared pan and spread evenly.

7. Arrange the remaining apple slices neatly over the top of the batter.

8. Sprinkle 1 tablespoon of sugar over the apples. Add a small pinch of cinnamon if desired.

9. Bake for 40–45 minutes, or until golden brown and a toothpick inserted into the center comes out clean.

10. Let the cake cool in the pan for 15 minutes, then transfer to a wire rack.

11. Slice and serve warm or at room temperature.
