The claim in the image is misleading. These treats are not zero-carb, especially if made with coconut, and people with diabetes should still watch portion sizes. While they’re flour-free and can be lower in carbohydrates than many desserts, they aren’t something you can eat “as much as you like.”

No-Bake Chocolate Coconut Bars (Flour-Free)

These creamy coconut bars are coated in rich chocolate and make a delicious low-carb-style treat when made with unsweetened ingredients.

Ingredients

Coconut Filling

  • 2½ cups unsweetened shredded coconut
  • 4 oz (115 g) cream cheese, softened
  • 2 tablespoons melted coconut oil or unsalted butter
  • 2–3 tablespoons powdered erythritol or your preferred sugar-free sweetener
  • 1 teaspoon vanilla extract
  • Pinch of salt

Chocolate Coating

  • 6 oz (170 g) sugar-free dark chocolate
  • 1 tablespoon coconut oil

Instructions

Step 1: Make the Filling

In a large bowl, combine the shredded coconut, cream cheese, melted coconut oil, sweetener, vanilla, and salt. Mix until the ingredients hold together when pressed.

Step 2: Shape the Bars

Divide the mixture into 10 equal portions and shape each into a small log or bar.

Step 3: Chill

Place the bars on a parchment-lined tray and refrigerate for 30–45 minutes, or until firm.

Step 4: Melt the Chocolate

In a microwave-safe bowl or over a double boiler, melt the sugar-free chocolate with the coconut oil. Stir until smooth.

Step 5: Coat the Bars

Dip each chilled coconut bar into the melted chocolate, coating it completely. Let the excess chocolate drip off before placing it back on the parchment paper.

Step 6: Set

Refrigerate for 20–30 minutes, or until the chocolate has hardened.

Step 7: Serve

Enjoy chilled for the best texture.

Storage

  • Refrigerator: Store in an airtight container for up to 1 week.
  • Freezer: Freeze for up to 2 months. Thaw in the refrigerator before serving.
