Ingredients

For the Scones

  • 2 cups (250g) all-purpose flour
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • ⅓ cup (65g) granulated sugar
  • ½ cup (115g) cold unsalted butter, cubed
  • ½ cup (120ml) heavy cream or whole milk
  • 1 large egg
  • 1 teaspoon vanilla extract

  • 1 tablespoon milk or cream

  • ½ cup raisins
  • ½ cup dried cranberries
  • ½ cup chocolate chips
  • 1 teaspoon lemon zest

Instructions

Step 1: Prepare the Oven

Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper.

Step 2: Mix the Dry Ingredients

In a large bowl, whisk together:

  • Flour
  • Baking powder
  • Salt
  • Sugar

Step 3: Cut in the Butter

Add the cold butter cubes and rub them into the flour mixture using your fingertips or a pastry cutter until the mixture resembles coarse crumbs.

Step 4: Add the Wet Ingredients

In a small bowl, whisk together the cream, egg, and vanilla.

Step 5: Shape the Dough

Turn the dough onto a lightly floured surface.

Gently pat it into a circle about 1 inch (2.5 cm) thick. Avoid overworking the dough.

Cut into 8 wedges like a pizza, or use a round cutter for traditional scones.

Step 6: Bake

Place the scones on the prepared baking tray.

Brush the tops lightly with milk or cream.

Bake for 15–18 minutes, or until the tops are golden brown.

Step 7: Cool and Serve

Allow the scones to cool for 5 minutes before serving.
